A protrusion (the P from "PROJECTION") has been added to the edge of the lid to ensure stability and ease of insertion and removal, and a hole has been drilled into the edge of the hotel pan (used as a set) to allow it to be inserted and removed smoothly, so you can work with the lid inserted.
It saves space, allows you to quickly place the lid when needed, and dramatically improves work efficiency.
